½ cup unsweetened cocoa powder

1 teaspoon vanilla extract

1 cup beet puree+1 tablespoon lemon juice

1½ cups coconut palm sugar

¾ cup safflower oil

3 eggs

1 tablespoon apple cider vinegar

½ cup nondairy milk

3 cups Dr. Susan’s Gluten-Free Flour Blend #2

1 teaspoon baking soda

½ teaspoon salt

FROSTING

2 cups coconut butter, chilled

8 cups powdered sugar

4 cans coconut milk, chilled overnight

1 cup honey

1 tablespoon vanilla extract

TOPPING

½ cup unsweetened coconut flakes
